And, February is here. It’s kind of like the hump of winter time. The excitement of the holidays is over, yet the promise of spring still looms ahead. Well, this month is about to get a lot more exciting with some amazing meals and recipes for February!

Did you know that February 4th is Homemade Soup Day? Let’s make this easy Zuppa Toscana. It is without a doubt one of my favorite soups. And, since it’s broth based and has kale, it’s healthy, too!

This my own version of Olive Garden's soup. It's full of flavor with potatoes and sausage, yet has kale to balance things out. To make it healthier and lower in fat, use turkey sausage.

February 9th is World Pizza Day! Let’s celebrate with homemade pizza. Try my fool-proof and easy pizza dough recipe. Regardless of your previous experience making pizza dough, you’ll ace this and become a pizza wonder.

Best Ever Pizza Recipe
You can use all-purpose flour for this recipe, but the pizza crust is much lighter with the 00 and all-purpose flour mixture. If using pepperoni or salami,  microwave them on paper towels for about 30 seconds before adding them to the pre-baked pizza. This helps cut down on oil accumulation on the top of the baked pizza.

Black Bean Soup

Black Bean Soup is my answer to the perfect weeknight meatless meal (just leave out the bacon). It is so good that you won’t miss the meat. I use an immersion blender (or a food processor/blender) to mash some of the beans, but you can mash them by hand, too. It makes for a creamier, richer soup.

This is a really versatile recipe. You can easily spice it up by using original Rotel instead of the mild version. It can be adapted to make it vegan (leave out the bacon and use vegetable broth) friendly. I like my soup a little creamy so I use the blender to mix the last can of beans with broth until creamy. 

Steak & Shrimp – Valentines Dinner

How about a romantic dinner at home this Valentine’s Day? It’s what we do to avoid the long waits and crowded restaurants on February 14th. After all, there’s nothing romantic about that. So, check out my tips for having a romantic night at home here.

Ever since my husband upped his steak grilling game, I’d rather have steak at home anyway. A really good steak dinner at a restaurant is expensive. And, I’m often disappointed when it’s over cooked or too chewy. For easy directions and tips on grilling steak, check out this post (scroll down post for recipe).

Chicken Chile Verde

This is one of the first meals that I made in the Instant Pot. It’s a quick and easy weeknight meal. But, if you don’t have an Instant Pot, cook it in the Crock Pot. The instructions are include in the recipe. Serve it over rice, or in corn tortillas.

Smaller families can get two meals from this recipe. Make it early in the week and you can use it to create other meals, such as chicken enchiladas or tacos, later that week.

Whenever we go to an Italian restaurant, I always look at the Lasagna first. Those layers of pasta, cheese, and meaty sauce? One word: irresistible! Make your own at home in February. Here’s the recipe:

This lasagna is absolutely delicious, with it's layers of pasta, cheesy goodness, and rich pasta sauce. What's even better is that with the right ingredients, it's also low-sodium and gluten-free!

This is my new favorite fast dinner, so it makes sense that it’s on my February dinner list. I use chicken or turkey sausages since they’re lower in fat. With roasted veggies, it’s the perfect combination of protein and healthy carbs.
